Honestly, who doesn't like chocolate? It's mother nature's gift to all of us. When dieting or when having food restrictions, this recipe could be a heaven send for those craving the beloved cacao.
For this recipe you will need:
Lilly's chocolate morsels sweetened with Stevia. It's the only one I use and recommend.
Ghirardelli's Unsweetened powered 100% cocoa. There are other options, but this one is seriously superior. ChocZero Vanilla syrup, Oooflavors' brownie extract. You may replace those ingredients as you wish, but those are the best options for me. Ingredients:
- 2 and 3/4 Cups Almond flour
- 1/4 Sweetener (I use Swerve or Monkfruit Lakanto brand)
- 1/4 Cup powered cocoa
- 1/4 Cup chocolate morsels
- 1/4 tsp kosher salt
- 2 Large eggs
- 1 stick of butter (1/2 cup)
- 2 tbsp heavy cream
- 2 tsp vanilla
- 1 Tbsp ChocZero syrup
- 1 dropper Oooflavor brownie
Preheat oven at 350F
1. Mix all the dry ingredients until it's an homogeneous chocolate color.
2. Melt the butter and whisk it with the rest of the liquid ingredients until a cream
3. Add the cream to the dry ingredients and fold with a spatula.
4. Use a baking mold for small cupcakes. Or use any mold of choice. The dough is very sticky and not firm.
5. Bake for 10 to 12 minutes.
